Sticky Beans

•900g bag of white beans
•1/2 pound pulled pork
•One small red pepper (slivered)
•One small yellow pepper (slivered)
•You could use Jalapenos instead if you like it hot
•Approx 2 Tbsp garlic (three cloves slivered)
•One bottle of Sticky Sauce ( I used Mid-evil)
•Place the first 4 ingredients in a heavy pot and add enough water to cover by about 1/2 inch.
•Set your cooker to 300 degrees
(I used the Big Green egg but a stove would work too)
place the beans in the cooker uncovered.
•Check them every hour (stir them now too) and add enough
BOILING water to keep everything covered when needed.
•After about 4-5 hours stop adding boiling water and let beans thicken up nicely.
remove them from the heat and add Sticky Sauce
(the more the better) to try and get the consistency you desire.

Sandra’s Sticky Ribs

Our favourite way to use Charlie's Sticky Sauce is on ribs.
It really "sticks to the ribs" and adds huge flavor! A little secret
to fall-off-the-bone tender ribs is to bake them in the oven first.
Place the ribs in an inch or so of water in a baking dish and add
a few dashes of Worcestershire sauce if you like. Cover them
and bake at 300 degrees for about 1-1/2 or 2 hours. Drain ribs
and pat dry. You can add any dry seasonings if you like such
as garlic powder, black pepper. Grill on bbq medium heat until
golden and brush on the Sticky Sauce for last few minutes of
grilling. Make sure there's plenty of sauce for dipping.

Sticky Beer Ribs

•3 racks back ribs (3lbs)
•2 tbsp coarse salt
•2 tbsp chili powder
•1 tbsp coarse black pepper
•1 12 oz bottle dark ale
•Charlie’s Sticky Sauce

•Pre-heat oven to 325°F
•Remove tough membrane from concave (non-meaty) side of rib rack.
Combine salt and pepper and season both sides of the rib racks.

Place ribs, meaty side up, on a shallow baking sheet, on a rack if you have one,
directly on to the sheet if you don't. Use a second baking sheet to avoid overcrowding.
Pour beer onto baking sheet(s).

Cover tightly with aluminum foil and bake for 60 minutes, or until meat is tender and is beginning to recede from bones. Remove from oven and refrigerate until the grill is ready.

Place on grill set at medium-low. Baste ribs with your favourite Sticky Sauce, turn, and baste other side.
Baste and turn every few minutes or so until ribs are nicely coated and hot. Barbecue sauce burns very easily, so keep a close eye on them.


Sticky Chili

•¼ cup vegetable oil
•1 large onion, finely chopped
•A dozen medium sized mushrooms
•2 – 4 cloves garlic, finely chopped
•1 lb. lean ground beef
•1 tsp. paprika
•2 cups canned diced tomatoes, undrained
•3 cups kidney beans, red, drained
•1 bottle Charlie’s Sticky Sauce, Mid-Evil or Stupid Hot preferred

•Heat oil in a heavy skillet over medium-high heat.
•Add onions and garlic for 2 minutes, add mushrooms and cook another 4 or 5 minutes.
•Remove mixture from skillet.
•Add ground beef to hot skillet and cook until browned. Add mushroom, onion, garlic mix.
Add Paprika. Add tomatoes with liquid and Charlie’s Sticky Sauce. Stir well.
•Reduce heat to low, cover and simmer for an hour.
•Stir in kidney beans for 5 minutes.

Serve and enjoy.
